Theater in the Park

It was date night for the Southards last night. Steve let me choose and we went to Theater in the Park (if you live in the KC area, this is a great summer outing) to watch Aida. It was so much fun, a nice change of venue and something fun for the summer. Watching a play/musical was also on my list of 30 before Thirty.  Thanks to our friend Rebecca who came over and watched the kiddos!



When we got home Mr. Southards had an extremely nice gift for me. He has been working on this gift for months and was successful at surprising me with it.  My face hurt from smiling so much with excitement. It was something I have been wanting for years and let's just say it has a nice sparkle to it. Thank you my love :)

Summertime swimming

Some ladies from our Monday morning Bible study had a playdate at our friend Sheri's house who has a pool. The kids and the mommas had a blast. This is why I love summer!

Payton started out very fearful of the water, but after watching the older girls who were swimming like fish, she was doing great at the end.

Coconut Lime Sugar Cookies and Iced Coffee

For the girl who doesn't post recipes very often, we are on a roll. 

I have found recipe on Pinterest (which is amazing for those of you who are hiding under rocks and haven't heard of the website)



Chewy Coconut Lime Sugar Cookies
2 3/4 cups all-purpose flour
1 teaspoon baking soda
½ teaspoon baking powder
½ teaspoon salt
1 cup butter, softened
1 ½ cups white sugar
1 egg
½ teaspoon vanilla extract
zest of one large lime, finely minced
3 tbsp lime juice (I used Key lime juice leftover from THIS recipe)
½ cup unsweetened toasted coconut
½ cup sugar for rolling cookies

Directions
1. Preheat oven to 350 degrees. Line cookie sheets with parchment paper. If you haven't already toasted your coconut just put a layer of coconut on a cookie sheet and bake it at 350 degrees for 5-7 minutes. Watch out. It goes from white to burnt really quick if you aren't watching closely.
2. In a small bowl, stir together flour, baking soda, baking powder and salt. Set aside.
3. Using a mixer, beat together the butter and sugar until smooth and very fluffy.
4. Beat in egg, vanilla extract, lime juice and lime zest.
5. Gradually blend in the dry ingredients and toasted coconut.
6. Roll rounded teaspoonfuls of dough into balls, and roll in sugar. Place on lined cookie sheets about 1 1/2 inches apart. I made mine too big and they ran together. These do spread quite a bit.
7. Bake 8 to 10 minutes in the preheated oven, or until lightly browned.
8. Let stand on cookie sheet two minutes before removing to cool on wire racks.

Coffee would be great with these, but since it is almost 100 degrees here, I gave Pioneer Women's iced coffee a try. Since I discovered my new BFF sweetened condensed milk in THIS recipe.

Check out her recipe HERE. I didn't plan ahead enough to do the "cold brew" method, but rather just brewed coffee strong and let sit in the refrigerator. I am going to try to the cold brew sometime.

God & Sex

GOD & SEX
Now that I have your attention, let's talk about it.

Right now we are in a FAQ's series at church. Steve had the honor to speak on the oh so easy subjects of what the Bible has to say about

Homosexuality

Birth Control
&
Masturbation
&
More....
Let me say that I believe he did an excellent job presenting what truth that is found in the Bible. There are some topics that the Bible isn't straight forward, so Steve found principles that apply. These topics are so often avoided completely in church, or skimmed over. Some people don't want to "offend" anyone. Well, I personally believe the Bible is the living Word of God, that is truth, it is meant to make your life more Full, not minimize your "fun."  

I really don't think I can say it any better than my husband. If you have time, I strongly suggest you watch his sermon. It might open your eyes to things you didn't know. 

I am not asking you to agree with me, hey if you don't believe God is who he says he is, or that the Bible is a book to base your life off of, then I don't expect you to agree with everything. I do ask that you at least listen, stew over it, and even question God with your uncertainties. He doesn't call us to be robots, he wants to hear from you.

Amazingly easy and yummy Key Lime Pie

We are hosting a dinner meeting at our home tonight, food is being catered so I offered to do homemade dessert. I wanted to find a good summer dessert and thought of Key Lime Pie. We are having BBQ for dinner, I thought that would be refreshing afterwards. I found a recipe on Allrecipes that was super easy and had great reviews. While making it I discovered the sweet pleasing flavor of sweetened condensed milk. I recently read a recipe on Pioneer Woman for iced coffee that called for Sweetened condensed milk and I wonder how that could be good in coffee, that was my ignorance speaking. I made up the filling and literally licked the mixing bowl dry. I probably didn't even need to wash it, except my germs were all over it.  I plan on making this at our beach vacation later this month with my family.  Hope you enjoy!




Ingredients

  • 1 (9 inch) prepared graham cracker crust
  • 3 cups sweetened condensed milk
  • 1/2 cup sour cream
  • 3/4 cup key lime juice (I found this in the juice isle)
  • 1 tablespoon grated lime zest

Directions

  1. Preheat oven to 350 degrees F (175 degrees C).
  2. In a medium bowl, combine condensed milk, sour cream, lime juice, and lime rind. Mix well and pour into graham cracker crust.
  3. Bake in preheated oven for 5 to 8 minutes, until tiny pinhole bubbles burst on the surface of pie. DO NOT BROWN! Chill pie thoroughly before serving. Garnish with lime slices and whipped cream if desired.

Amount Per Serving  Calories: 553 YIKES | Total Fat: 20.5g | Cholesterol: 45mg

You could use reduced fat and low fat milk, sour cream, and graham cracker crust, not sure how many calories that would save you.

The girls are home!

Zack and Hil have both girls home!!!! You can catch up on their story HERE and HERE


Reese came home almost 2 months ago, and recently her sweet sister Ava joined her.

Ava still has a journey, she is on a ventilator, a g-tube and has her trach. They have around the clock nurses for at least 6 weeks as they transition to having her home

Tummy time for sisters!

Since they girls were so preemie (born at 26 weeks), their immune systems are so vulnerable. If they get a cold, they could end back at the NICU. After 6 months of being in the NICU, Zack and Hil don't want to take the girls back. Visitors are extremely limited, so I was excited this past weekend when I heard that they were going to be taking a dip in their pool in their backyard (right next door). I grabbed my camera and headed right over.  

I got these glasses for them for their 1 month old gift. I knew their mommy and daddy would be taking them outside when they got out of the hospital, had to have my girls in style.

Ava fell right asleep, "I get it girl, that sun and pool can wear you out!" Ava is slowing being weaned off her steroids which will eventually help with the swelling in her face. I think she just looks like a fat happy baby, it is that skinny sister of her that throws you off.

I so want to grab those little girls and cover them with kisses, they are off limits for almost another year though. Especially since I have my own kids germs all over me :) 

So excited that both girls are home, I look forward to the day that come running over to my house, to play with our kids and I get to spoil them and kiss them then. That time will be here soon enough.

4th of July

We had a great extra long time down at the lake with the whole Southards clan for the 4th of July. It was beautiful weather and we had fun hanging out with family.

Steve's Aunt and Uncle came down for one day to visit. Buster and his cousin Selah are only 1 month apart.

Cow Appreciation Day

We were getting together with one of Payton's favorite friends Emma today. I had the brainstorm to dress our girls up as cows and head to chick-fil-a for Free food!



I wasn't the only one with the same idea, it was CRAZY in there!


If you live by a chick-fil-a, head there today, dressed like a cow and get free food!
